Choc Chip Cookies (dairy free, egg free, nut free plus gluten free option)

If making with gluten-free flour, flatten well as they will not spread much.

Preparation time:     15 minutes
Servings:                 About 30 cookies


1/2 cup Nuttelex (or other dairy-free spread)
1/4 cup caster sugar
1/4 cup brown sugar
1 teaspoon vanilla essence
1/4 cup soy milk
2 cups SR flour (or gluten-free SR flour)
1/2 cup dairy-free, nut-free chocolate chips

Preheat oven to 180 degrees celcius (fan-forced) and line biscuit trays with non-stick baking paper.

1. Mix Nuttelex and sugars together in a large bowl with a large metal spoon until well combined (use back of spoon to push mix together).
2. Add vanilla and soy milk and mix well.
3. Add flour and chocolate chips and use back of metal spoon to mix until well combined.
4. Roll teaspoons of mixture into balls and place on baking trays, allowing room for spreading.  Flatten slightly with a fork.
5. Bake for 10-12 minutes or until golden brown.
6. Remove from oven and cool slightly on trays before placing on wire racks to cool.

 Chocolate Banana Cake (dairy free, egg free, nut free)

This is a delicious way to use up old bananas!  Make this in a standard cake tin or if you want to enjoy it even faster, bake in a ring pan and reduce the cooking time by around 10 minutes.
Preparation time:    15 minutes

Dry    1 cup SR flour
         1/4 cup cocoa
         2/3 cup caster sugar

Wet   1/2 cup vegetable oil
         1/2 cup soy milk
         1/2 cup ripe banana, mashed (about 2 small bananas)

Preheat oven to 180 degrees celcius (fan forced) and grease and line a 20cm cake tin with non-stick baking paper.

1. Mix all dry ingredients in a large bowl.
2. Make a well in centre of dry ingredients and add wet ingredients.
3. Mix together until they form a batter (not too much mixing).
4. Pour into prepared tin and bake for 40-45 minutes or until a skewer inserted into cake comes out clean.
5. Cool in cake tin for 10 minutes before turning out onto wire rack.
6. Delicious on it's own or can be iced with sugar icing or chocolate-cream icing.
